French Head Chef appointment

The Vale Hospital is delighted to welcome Stephane Trinci, the Vale Hospital’s new Head Chef.

Stephane, who won an AA Rosette whilst head chef at the Gliffaes Hotel near Crickowell (Powys), will serve locally sourced ingredients on a menu that is available to staff, visitors and staff at The Vale Hospital.

Some sample dishes include:

  • Duck Rillettes with Homemade Chutney and Toast
  • Courgette, Tomato and Cheese Tart
  • Smoked Salmon Gravalax, with Beetroot and Carrot Salad
  • Tian of Crab and Crayfish Cocktail

Mains

  • Asparagus and Mushroom Risotto
  • Moroccan Meatballs with Couscous, Flatbread, Cucumber & Minted Yogurt
  • Canon of Lamb with Couscous and Asparagus
  • Peri Las Welsh Blue Cheese and Onion Quiche
  • Welsh Minted Lamb Chops with Aubergine, Courgette & Tomato Sauce
  • Grilled Chicken Fillet with Pomegranate & Blood Orange Salad
  • Sea Bream with Salad Nicoise

  • Chocolate and Pistachio Mousse
  • Summer Fruit Pudding
  • Confit of Strawberries with Whipped Cream
